This recipe was translated from Amelia Jul, a Swedish Christmas magazine. It called for ground moose, but venison works great.
1LB. Ground Venison
8 oz. Ground Pork
1/2 yellow onion
Butter for frying
1 tsp. Thyme
1 tsp. Rosemary
1 tsp. Marjoram
5 crushed Juniper berries
1 egg
1/2 tablespoon beef base
1/4 cup Water
1 tsp. salt
Pinch fresh ground black
Peel and finely chop onion.
Fry in butter until color starts to turn brown.
Blend in spices and juniper berries.
Let cool.
Mix all ingredients including salt and pepper.
Moisten hands in cold water and form into cocktail size meatballs.
Lay meatballs on a water rinsed cutting board.
Brown meatballs in butter.
Shake frying pan so meatballs are evenly brown.
Lower temp and cook 3-5 minutes uncovered.
Juniper berries are available from Bread & Honey in Mora.
Enjoy
